Cornish Bakery to launch first Welsh location in flurry of new openings
9th February 2026 Cornish Bakery is set to launch its first location in Wales, as the operator prepares to open six new bakeries by May. The new openings will be in Newbury and Lincoln in March, Betws-y-Coed (Wales), Gunwharf Quays, and Wells in April, and Witney in May. A total of £3.5m will be invested across the new locations, alongside a further £500,000 dedicated to refurbishing four existing bakeries in West Bay, Lyme Regis, Ambleside, and Bourton on the Water. Betws-y-Coed, on the eastern edge of Snowdonia, marks the independent operator’s first footprint in Wales, and will be the chain’s largest ever property. Despite its small size as a village, the area is popular with walkers, climbers, and cyclists. Betws-y-Coed will also introduce Cornish Bakery’s new brand extension, ‘RISE by Cornish Bakery’. At Gunwharf Quays in Portsmouth, as part of a recent shopping outlet redevelopment, Cornish Bakery is relocating to a new two storey property.
